Skillet Pork Chops with Apple Plum Pan Sauce

Don’t you crave comfort food and homey meals as soon as the weather starts to get chilly? 
When I was making a recently posted recipe, super simple  Apple Plum Cardamom Compote, it reminded me of cranberry sauce and I immediately started thinking of savoury dishes to incorporate it into.  I’m all about sweet and savoury combos, and this dish perfectly fits the bill. 
In just over 30 minutes you can have this dinner on the table AND you only need one pan to make it.
My Apple Plum compote works amazingly here, but if you can’t be bothered to make it (I won’t be upset) grab a jar of good quality unsweetened applesauce instead.  

Skillet Pork Chops with Apple Plum Pan Sauce

Ingredients

  • 2 centre cut 1” pork loin chops
  • 2 tsp olive oil
  • 1 tsp Kosher salt
  • ½ tsp pepper
  • 2 tbsp butter
  • 1 shallot finely diced
  • 1 tbsp Dijon mustard
  • 1 cup chicken broth
  • ¾ cup apple plum compote or apple sauce
  • 1 tsp dry rosemary

Instructions

  • Pat pork chops with a paper towel to absorb any moisture. Season them with salt, pepper and brush or drizzle olive oil on each side.
  • Heat 1 tablespoon of butter in the skillet on medium high heat. When pan is hot and butter is sizzling place the chops in the pan, turn heat down to medium and leave them for 5 minutes. Turn them over and fry for another 4 minutes.
  • Remove chops from the pan and set aside.
  • Turn heat down to low and add the remaining tablespoon of butter and the diced shallots to the pan. Sauté for 5 minutes.
  • Add Dijon mustard and turn heat back up to medium. Pour broth, Rosemary and compote into skillet stirring well.
  • Add the pork chops back into the pan along with any juices that they may have released. Continue to cook pork chops for 5-8 more minutes or until done. If you feel like the sauce is evaporating too much, simply add more broth.
  • Serve with simple mashed or roasted potatoes.

RPork should always be cooked to a temperature of
71°C (160°F)
