Nothing beats making your own sauce. Perfect for your favourite pasta, or use use as a base for other dishes like chilli. I often make large batches and portion and freeze it in freezer bags. That way I always have some on hand. Turn it into a tasty bolognese by adding cooked ground beef or Italian sausage. Makes approximately 4 cups of sauce.

1 28 oz can crushed Italian tomatoes
1/2 cup red wine
1 small onion finely chopped
1 carrot finely chopped
1 stalk celery finely chopped
1 tsp salt
1 tsp sugar
1 tbsp dry oregano
1/2 cup fresh basil leaves
2 tbsp olive oil
Heat olive oil in large sauce pan on medium. Sauté onion, carrot and celery with chilli flakes for about 7 minutes until softened. Add tomatoes, wine, salt, pepper, oregano and sugar. Stir well. Cover and simmer on low heat for 30-40 minutes. Throw in basil in the last 5 minutes.
