Cranberry Sauce

Canned cranberry sauce is wrong on so many levels. Gelatinous, too sweet and full of preservatives. YUCK. It is so easy to make it fresh. Even though we rarely make a turkey, I always make this sauce. It also pairs amazingly well with chicken, beef and pork and is AMAZING on sandwiches. I prefer a more tart sauce, if you like it sweeter you can double the sugar. Makes approximately 4 cups of sauce

2 340 gr (12 oz) bags of fresh cranberries

2 cups orange or pomegranate juice

1 cup brown sugar packed

1 tbsp orange zest

1 cinnamon stick

Fresh bay leaf (optional)

Star anise (optional)

On medium heat stir juice and sugar until sugar dissolves. Add cranberries and bring to a boil . Add remaining ingredients, reduce heat and simmer for 10 minutes. Let cool. Remove cinnamon stick , bay and star anise. Cover and refrigerate up to 4 days
